It's hard to remember when they didn't exist because bakers around the world use them so extensively.
Unlike parchment paper, they don't fly away in a convection oven, and because they are heavy enough to lay absolutely flat, no air can be trapped under them. Hot air rises of course, which cause perfectly shaped macarons and other cookies to become oval shaped.
